QUESTION - Are recipes for "canned" pumpkin or applesauce bread safe to use?

ANSWER - Canning breads at home is not recommended. Jar manufacturers don't recommend that their jars be used for this type of product because they may break and injured someone. There is also concern over the safety of these products because their low acidity and high water activity may be insufficient to protect against the possiblitiy of botulism. Even if the the pH and moisture content would prevent formaiton of the toxin, the consumer could get sick if the directions were not followed exactly as stated. Many consumers have altered the ingredients in these recipes which changes the water activity and/or pH and ultimately the safety of the product.
